Name: Chicken Curry With Saffron Rice
Ingredients: For the chicken:; 8 skinless chicken thighs fillets; 1 tablespoon oil; 1 large onion, diced; 1 tablespoon ginger, minced; 5 cloves garlic, minced; ½ teaspoon black pepper; 3 large tomatoes, chopped; 1 ½ teaspoon turmeric; For the rice:; ¼ cup (60ml) boiling water; Pinch saffron threads (roughly ⅛ teaspoon); 1 cup (225g) basmati rice; 1 teaspoon coconut oil; ½ teaspoon onion powder; ¼ teaspoon salt; 1 ¾ cup vegetable stock
